Gluten Free Shortbread

I recently visited Edinburgh and was rather disappointed that I wasn’t able to try some of the traditional Scottish delicacies like Haggis, Whiskey and Shortbread. So the other night I decided make up for what I had missed out on and made some gluten free shortbread. I used a traditional recipe and swapped the plain flour with gluten free flour. It was a very easy thing to make and it went down a treat with my dinner guests.


  • 100g unsalted butter (plus some for creasing)
  • 50g caster sugar
  • 100g plain gluten free flour (I used Doves Farm)
  • 50g corn flour


  • Heat oven to 160C
  • Mix the butter with an electric whisk to make it into a fluffy cream
  • Add in the sugar
  • Sieve the gluten free flour into the mixture
  • Then slowly sieve the corn flour into the mixture
  • Knead the dough together with your hands
  • Spread evenly into an 20cm round baking tray which has been greased with butter
  • Pierce with a tooth pick so that it doesn’t crack in the oven
  • Cover with cling film and place in the fridge for an hour
  • Once cool place in oven for 1 hour
  • Take out and let it cool down

(I found that it tasted even better the day after)
